Recipe: Indian Pudding

BAKED INDIAN PUDDING
(From the Colonial Inn, Concord, Massachusetts)
1 qt. milk
1/4 c. yellow coarse corn meal
1/2 c. molasses
1 egg
2 oz. butter or oleo
1/2 c. sugar
1 tsp. cinnamon
Boil milk, yellow coarse corn meal and molasses for
about 15 minutes. Beat 1 egg, 2 ounces butter or oleo, 1/2 cup
sugar and cinnamon. Mix all ingredients together and pour into
a baking pan. Bake in a 350 degrees oven for 1 1/2 hours. Stir every
20 minutes. Top serving of Indian Pudding with vanilla ice
cream. Yield: 8 portions.
