INSTANT BURGUNDY SAUCE
Makes 1 1/2 cups
1 (10 3/4 ounce) can cream of mushroom soup
4 diced fresh mushrooms
2 tablespoons dry red wine
dash kitchen bouquet
Stir all ingredients together over low heat until hot.
USES:
FOR BEEF BURGUNDY:
Add 1 1/2 to 2 cups diced leftover roast beef to sauce to make Beef Burgundy.
FOR BEEF STROGANOFF:
Add 1 1/2 to 2 cups diced leftover roast beef, plus 1/2 of a green bell pepper that has been sliced and sauteed, and 2 tablespoons or more sour cream.
INSTANT NEWBURG SAUCE
Makes 3 cups
1 (10 1/2 ounce) can cream of shrimp soup
1 pound fresh shrimp, shelled and deveined
3 tablespoons sherry
3/4 cup milk
Heat cream of shrimp soup, stirring until smooth. Add remaining ingredients and stir together over low heat until sauce is heated thoroughly and shrimp turn pink.
USES:
Serve as is over rice, or use as a Newberg Sauce for lobster or crab dishes.
