Recipe: Irish Potato Cake (using unsweetened chocolate)

IRISH POTATO CAKE

1 1/2 cups sugar
1 cup butter, softened
3 eggs
1 cup mashed potatoes
2 cups flour
2 tsp. baking powder
1/2 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. allspice
1 cup milk
2 squares (1 ounce each) unsweetened chocolate, melted
1 cup chopped nuts
1 tsp. vanilla

Preheat oven to 350 degrees F. Grease and flour a loaf pan.

Cream sugar and butter together. Add eggs, then potatoes.

Combine flour, baking powder, nutmeg, cinnamon, and allspice. Add to creamed mixture alternately with milk. Stir in chocolate, nuts and flavoring. Put in greased and floured loaf pan.

Bake in 350 degree oven until brown.
