Recipe: Rice and Beef Porcupines (Hunt's Tomato Sauce recipe, 1960's)

RICE AND BEEF PORCUPINES

"Choose your dinner! These perky little meat balls are ready to serve in 1 hour if you use regular rice - 1/2 hour if you use packaged, pre-cooked rice."

1 lb. ground beef
1/2 cup uncooked rice, washed*
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons shortening or drippings
2 cans (8 oz. each) Hunt's Tomato Sauce
1 cup water

Mix beef, rice, onion and seasonings. Form into small balls.

Fry in hot fat, turning frequently, until light brown but not crusty on all sides.

Add tomato sauce and water. Mix well. Cover. Simmer about 45 minutes.

VARIATION:

*JIFFY PORCUPINES:
To make with packaged, pre-cooked rice (Minute Rice), use 2/3 cup rice (half a 5 oz. package). Prepare as above. Simmer 15 to 20 minutes. These will not be as "porcupiney" as the longer-cooking recipe. But they are fluffy and moist, and taste delicious.
