ITALIAN FRIED CHICKEN
1/3 cup grated Parmesan cheese
3 tbsp all purpose flour
3/4 tsp dried basil, crushed
1/2 tsp salt
1/8 tsp ground nutmeg
2 1/2 to 3 lb broiler fryer chicken, cut up
2 tbsp cooking oil
in paper or plastic bag combine parmesan cheese, flour, basil, salt, nutmeg, and dash of pepper.
Add chicken, a few pieces at a time, and shake to coat evenly.
In 12-inch skillet heat cooking oil.
Place meaty chicken pieces toward the center and remaining pieces around the edge. Cook uncovered, over medium-low heat for 50 to 55 minutes or until chicken is tender, turning occasionally. Drain on paper towel.
Makes about 4 servings
