Recipe(tried): Italian Restaurant Bruschetta (re: Spaghetti Warehouse Bruschetta)

Appetizers and Snacks
BRUSCHETTA

2 plum tomatoes with the seeds and juice removed. Dice them finely!
2 tbsp finely chopped fresh basil (DO NOT use dried)
2 tbsp grated Asiago cheese (you can use just about any grated hard cheese though, Parmesan, etc)
1 to 2 tbsp extra virgin olive oil
1 tbsp finely chopped white onion
1 tsp chopped and smashed fresh garlic
Salt (to taste)

Mix it all together and let it sit for a few minutes to absorb the flavors.

Serve it on toasted French bread slices (crostini).

I'm a chef in an Italian restaurant and this is how I make it fresh to order.
