Recipe: Jack Rabbit Hopping John (Jack Rabbit brand beans, 1960's)

Side Dishes - Beans
JACK RABBIT HOPPING JOHN

1 cup dry Jack Rabbit Black-eye beans (peas)
6 cups water
1/2 pound sliced bacon
1 dried hot red pepper
1 cup uncooked rice

Cover washed black-eye beans (peas) with 6 cups water, bring to boil and boil 2 minutes. Cover and let stand 1 hour; then add bacon, and hot red pepper. Bring to boil and simmer, covered, for 1 hour or until beans are tender.

Add rice and cook 15 minutes, or until tender, adding boiling water if more liquid is needed. Season to taste.

Makes 6 servings
