Recipe: Jahb Chae

Main Dishes - Beef and Other Meats
mickey,

i can't find the exact recipe that you are looking for. but i did dig up this recipe that might be useful. you may replace the beef with chicken. (korean dishes are usually inter-changeable anyway.) maybe you can do something about it with this finding.

i actually wonder if the marinade for the chicken is similar to the famous korean BBQ sauce and serve the chicken on cooked glass noodles? dunno... you may also search for the sauce recipe here. we had a couple discussion before. (to be honest, the marinade in the recipe i post here is close to the BBQ sauce.)

sorry can't be more helpful. i hope someone else turn up with the answer.

============================================
Jahb Chae

1 lb. transparent noodles (I use dang myun; mung bean thread noodles OK too.)
1 lb. lean beef, cut in narrow strips
1 lb. carrots, cut in matchstick strips
1 onion, cut in matchstick strips
1 bunch green onions, cut in 2" strips
1 package frozen spinach (or = fresh)
1 egg pancake (3-4 beaten eggs, fried on both sides and cut into strips) other vegetables can be added (mushrooms, zucchini, etc.)

Marinade:
3 T sugar
1/2 c soy sauce
3 T sesame oil
2 t. roasted sesame seeds (buy them already roasted)
1/2 c. green onion, chopped fine
1 1/2 t. minced garlic
1 t. black pepper

Mix beef strips with about 2/3 of the marinade; set aside. Boil noodles according to package directions (about 5 minutes); drain and rinse with cold water. Cut to about spaghetti length. Mix with remaining marinade. Cook spinach in small amount boiling water till just barely cooked. Stir fry vegetables in small amount of oil. (Add a litttle water to carrots to steam.) Fry the meat and marinade mix last. Add a little water when done. Mix meat, vegetables, noodles, and half the egg strips together. Can add more soy sauce and other seasonings, to taste. Serve on large platter or in large bowl, garnished with remaining egg strips, warm or at room temperature.

Makes 8 servings
