Recipe: Barbecued Hamburgers, Hamburgers in Sauce, and Ranch Style Hamburgers

FOR THE PATTIES:
2 lbs. ground beef
1 cup milk
3 tbsp. onions, chopped
1 cup uncooked quick oats
1/2 tsp. pepper
1/2 tsp. salt
FOR THE SAUCE:
1 cup catsup
1/2 cup water
6 tbsp. onions, fine chopped
3 tbsp. vinegar
2 tbsp. sugar
2 tbsp. Worcestershire sauce
Mix the ingredients for the patties together and shape. Brown well and place in a baking dish.
Mix sauce ingredients together in a saucepan. Boil 20 minutes. Pour over hamburger patties.
Bake 1 hour at 325 to 350 degrees F.
TO MAKE AHEAD:
These may be fully prepared and frozen. When baking, add 30 minutes to time to offset the cooking time for thawing/cooking. Put in cold oven and heat dish with oven.
HAMBURGERS IN SAUCE
6 to 8 hamburger patties
FOR THE SAUCE:
2 cups tomato juice
1/2 chopped onion
1/4 cup chopped celery
2 tbsp. sugar
2 tsp. Worcestershire sauce
1 tsp. vinegar
1/2 tsp. salt
1/4 tsp. pepper
Fry hamburger patties until done.
Combine ingredients for the sauce and pout over patties. Simmer 30-45 minutes.
Uncover; baste patties with sauce in pan every 10 minutes. Thicken sauce, if desired.
RANCH STYLE HAMBURGERS
1 1/2 lbs. ground beef
1 medium onion, minced
1 1/4 tsp. salt
1/8 tsp. black pepper
12 to 14 stuffed olives, sliced
1 egg
1/2 cup plain bread crumbs (moistened with water)
3 tbsp. Mazola oil
1 medium onion, sliced
1 (8 oz.) can Hunts tomato sauce
Mix hamburger, minced onion, salt, pepper, olives, egg and bread crumbs. Shape into patties and fry in oil. Remove from pan and set aside.
Saute sliced onion in same pan until tender. Add Hunts sauce and simmer for 5 minutes stirring frequently.
Add patties and simmer for 10 minutes.
