Hi Jan;
I found your recipe in a cookbook titled New Joys Of Jell-o.
SUNSET YOGURT SALAD
2 small or 1 large pkg. orange or lemon flavor jello
2 cups boiling water
1- 8 oz. container plain or pineapple-orange yogurt
1/4 cup cold water
1- 8 oz. can crushed pineapple in juice, undrained
1 cup shredded carrots

Dissolve gelatin in boiling water. measure 1 cup of dissolved gelatin into a small bowl, chill until slightly thickened. Stir in yogurt. Pour into a serving bowl (the picture in the book shows it in a clear bowl, this makes a pretty presentation) Chill till set but not firm.
Stir cold water into remaining dissolved gelatin. Add pineapple and carrots. Chill until slightly thickened. Spoon over gelatin-yogurt mixture in serving bowl. Chill until firm, about 4 hours. Garnish with carrot curls, lettuce leaves and pineapple slices if desired. Makes 10 servings

Chill time: 5 hours
