MIDDLE EASTERN PILAF
1/2 cup chopped onion
3 tablespoons butter or margarine
1 tablespoon olive oil
1 cup Uncle Ben's Converted Brand Rice
1/2 cup slivered almonds
2 1/2 cups chicken broth
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/3 cup golden raisins
2 tablespoons fresh chopped parsley
1 1/2 teaspoons fresh chopped mint leaves (or 1/2 teaspoon dried mint leaves)
Saute onion in butter and oil in medium saucepan until tender, about 5 minutes.
Add rice and almonds. Cook over low heat stirring constantly, until rice is golden.
Add chicken broth, salt and pepper. Heat to boiling; reduce heat. Cover tightly and simmer 20 minutes.
Remove from heat and stir in remaining ingredients. Let stand, covered, until all liquid is absorbed, about 5 minutes.
Makes 6 servings
