Recipe(tried): Sunset Salad from an old jello cook book

Here is a tried and true recipe I have made many times from an OLD Jello cook book I have. It has no yogart but I bet you could slip some in if you wanted.

SUNSET SALAD

1 pkg (3))oz Jell-O lemon, orange, or orange pineapple Gelatin
1/2 teas salt
1 1/2 Cups boiling water
1 can(8 3/4 oz) crushed pineapple or pineapple tidbits
1 Tabelspoon lemon juice
1 Cup coarsely grated carrots
1/3 Cup chopped pecans (optional)

Dissolve Jello and salt in boiling water. Add the undrained pineapple and lemon juice and chill until very thick. Fold in shredded carrots and pecans. Pour into individual molds or a 1 qt mold. Chill until very firm. Makes about 3 cups or 6 side dishes. I usually make a double batch as we really like it.
