Hi Terry,
I posted some interesting salsas on the Low Fat/Healthy board, some seem pretty quick and easy. Here is another idea from the same Gourmet Magazine that might be impressive on the side (this recipe only serves two):
Jicama and Cucumber Chili Spears
a 1/2 pound piece of jicama
1/2 English cucumber
2 teaspons fresh lime juice
1/8 teaspon chili powder
a pinch cayenne
coarse salt to taste
Peel jicama and seed cucumber. Cut jicama and cucumber into about 2-1/2 by 1/4 inch spears and in a bowl toss with remaining ingredients. (Serves 2)
(Gourmet has a footnote that this recipe is a popular snack in Mexico)
