Recipe(tried): Kale with potatoes
Misc. This is a quick & easy dish to make & is very tasty.
Kale with potatoes
1 pound medium red potatotes (fresh new potaotes are
especially good for this)
4 cups shredded kale
vegetable broth (enough to use for stir frying the
vegetables & steaming them until tender)
1 large onion, chopped
2 cloves garlic, chopped fine
seasoning for your taste ( I use salt, black pepper, garlic powder)
1. Boil potatotes until tender. Peel while hot, then cool in cold water & drain. Cut into thick slices.
(The potatoes can be prepared in advance & refrigerated until you are ready to prepare this dish)
2. Wash the kale, drain, & remove the stems & midribs. Stack leaves, roll up lengthwise, & shred crosswise.
3. In a large skillet, heat small amount of vegetable broth (I use this instead of oil), & add the onion. Saute over medium high heat, stirring, until onion just begins to brown.
4. Add kale, tossing it about until it wilts. Reduce heat to medium & stri-fry kale for 5 minutes more.
5. Add the potatoes & cook, covered, until they are heated through. Season to taste with your favorite seasoning & serve. I use garlic powder, salt, & black pepper for seasoning, but other seasonings, such as Veg-it, or herbal mixtures will also work.
This makes a good side dish for chicken or beef dishes. I often have it just by itself, or sometimes with soup & a salad.
