SOUR LEMON PIE
1 Keebler Ready-Crusts Graham Cracker Pie Crust
1 1/4 cups sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 3/4 cups water
4 egg yolks
1 tablespoon margarine
2 teaspoons finely grated lemon peel
1/4 cup lemon juice
3 drops yellow food coloring
1/2 cup sour cream
In saucepan, combine sugar, cornstarch, and salt.
Beat water and egg yolks until blended. Add to sugar mixture. Stir constantly over medium heat until thick and boiling. Boil 1 minute.
Remove from heat. Add margarine, lemon peel, lemon juice and food coloring. Stir until margarine is melted. Stir in sour cream, blending until smooth. Pour into crust.
Refrigerate 2 to 4 hours before serving. Refrigerate leftovers.
Makes 1 pie
