Recipe(tried): Ladies Pizza Night - Spinach and Artichoke Pizzas, Barbequed Chicken Pizza, Kitchen Sink Pizzas

Sunday Night I hosted my Ladies Bible Study Group for a Pizza Night. I served Spinach and Artichoke Pizzas, Barbequed Chicken Pizza, and Kitchen Sink Pizzas

For dessert I served a Grand Marnier Cheesecake with a Strawberry and Mandarin Orange laze.

Spinach and Artichoke Pizza

1 Pizza Crust, Prebaked ( I buy them three in a pack at Sam's)
2 boxes chopped frozen spinach, defrosted and squeezed dry
olive oil
6 cloves roasted garlic, mashed
1/2 red onion, thinly sliced
lemon-pepper seasoning

1/2 cup sundried tomatoes packed in oil, cut into strips
1 can artichoke harts, quartered
1 cup crumbled feta cheese
1 small can black olives, sliced
pinch of oregano
parmesan cheese to taste
olive oil to drizzle on top

In a non-stick skillet, heat a little olive oil and stir-fry the red onion until caramelized. add the dried spinach and cook for 2-3 min. Add the mashed, roasted garlic, and the lemon-pepper. Cook 2 min. longer.brush the pizza crust with a little more olive oil. Spread the spinach mixture over the crust within 1/2 inch of the edge. top with the artichoke hearts, olive slices, feta cheese, parmesan cheese, oregano and slices of sundried tomatoes. drizzle with a little more olive oil. Bake in a pre-heated oven at 450* for about 10 min. or until completely heated through. This is best when baked on a pizza stone that has been heated in the oven for at least 30 min.Barbequed Chicken Pizza

1 baked pizza crust
small bottle of your favorite bbq sauce
1 whole smoked, roasted chicken from the deli section of your supermarket, removed from the bone and shredded
1/2 red onion, thinly sliced and cooked in a little oil to caramelize
8 oz. sliced mushrooms, sauteed in butter
1 cup niblets corn
3/4 cup cheddar cheese, shredded
3/4 cup monterey jack cheese, shredded
spread crust with about 1 cup bbq sauce. Top with shredded chicken, mushrooms, cheeses, corn and caramelized onions. Dot with more bbq sauce to your taste. (I happen to like a lot,) Bake at 450* for about 10-12 min.

Kitchen sink Pizza

1 ready crust
favorite tomato sauce
sauteed mushrooms, onions, etc.
pepperoni and canadian bacon
Italian sausage, cooked and crumbled
Mozzarella, parmesan and provalone cheeses

Layer in order listed in the amounts you desire. Bake at 450* 10-12 min.
