NORTH AFRICAN LEMON DRESSING
"This dressing is suggested for salads with tomatoes, sweet onions, cucumbers, green peppers, or fruit salads and cottage cheese. At Tassajara, we use it often with salads of lettuce and grapefruit sections. A delicious variation can be made by using limes in place of lemons."
2 lemons (zest of)
1/4 cup lemon juice
1 1/2 teaspoons salt
1/8 teaspoon cayenne or Tabasco sauce
2 cloves garlic, minced
2/3 to 3/4 cup olive oil
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 teaspoon sugar
Combine all ingredients in a bowl; mix well and chill before serving.
