Recipe(tried): Last night for dinner - Quick and Easy Red Velvet Cake with Cream Cheese Frosting

Last night for dinner, hubby was in the mood for steak, so I fixed some sirloin steak, hashbrowns, and a tossed green salad. For dessert I fixed Quick and Easy Red Velvet Cake with cream cheese frosting. This cake is soooo easy and tastes just as good as a Red Velvet Cake that is made from scratch, no one even suspects that it starts off as a cake mix. Hope everyone has a great day.

Quick and Easy Red Velvet Cake

1 box fudge marble cake mix (I use Duncan Hines)
1 1/2 cup buttermilk
1 tsp. baking soda
2 eggs
1 1/2 tsp. vanilla
1 (1 oz) container red food coloring

In a mixing bowl, combine all ingredients together.(Be sure to include both packets of mix from the cake mix). Stir to blend. Beat with mixer 2 minutes or until well-blended. Pour into greased and floured cake pans to bake (I use 2 nine-inch pans). Bake at 350 for 25 minutes or so. (This cake really cooks fast-so watch it to keep it from getting too brown). Cool and frost with cream cheese frosting.

Cream Cheese Frosting

1 container of cream cheese (8oz)
1 box (1 lb) confectioner's sugar
1 stick (1/2 cup) margarine
1 tsp. vanilla
2 to 3 TBSP Milk

Beat with mixer until well blended, you may need to add a bit more milk for texture. Frost cake with frosting.
