ORIENTAL SURPRISE
1/2 pound cooked, peeled, deveined shrimp, fresh or frozen
1 (10 ounces) package frozen peas, cooked and drained
1 cup finely chopped celery
1/2 cup mayonnaise or salad dressing
1 tablespoon lemon juice
1/8 teaspoon curry powder
1/8 teaspoon garlic salt
1/8 teaspoon pepper
FOR SERVING:
1 (3 ounces) can chow mein noodles
1/2 cup salted cashew nuts
Salad greens
Parsley (for garnish)
Thaw cooked shrimp if frozen. Cut large shrimp in half. Combine with the next 7 ingredients in a large bowl and mix well; chill.
TO SERVE:
Add noodles and nuts; toss lightly. Serve on salad greens. Garnish with parsley.
Makes 4 servings
