Lemon Buttermilk Baby Cakes
1/2 cup butter, softened
1 cup sugar
1 egg
3/4 cup buttermilk
1 tbsp grated lemon peel
1 tbsp fresh lemon juice
1/2 tsp vanilla
2 cups plus 2 tbsp flour
1/2 tsp baking soda
1/2 tsp salt
Beat butter in a large bowl until light and fluffy. Add the sugar. Beat until well blended. Add egg and mix until well blended. Stir in the buttermilk, lemon peel, lemon juice, and vanilla.
Sift together flour, baking soda, and salt in a small bowl. Gradually add to the butter mixture. Chill dough at least 2 hours.
Preheat oven to 400 F.
Drop small rounded teaspoons of the dough onto a lightly greased cookie sheet.
Bake 6 to 8 minutes or until edges are lightly browned. Sprinkle a pinch of sugar over each cookie. Remove to wire racks to cool.
Yield: approxmiately 5 dozen cookies.
