LEMON CHICKEN
Serves 2
2 tsp. Honey
1 Tbsp. Lemon Juice
1 tsp. dried Parsley Flakes
1/4 tsp. Salt
1/8 tsp. white pepper
2 Half Chicken Breasts, boned & skinned
Spray metal pie pan with Pam. Heat honey in top of double boiler to liquify (or micro). Add rest of ingredients except chicken to honey. Place chicken in pan and spoon sauce over top. Broil 5" from heat. Turn, baste and continue to broil until done, about 10-15 minutes. Serve with rice and stir-fry vegetables.
CHICKEN IN ORANGE GINGER SAUCE
Serves 2
2 Half Chicken Breasts, Boned & skinned
1 Tbsp. Flour
1/2 cup Water
1 tsp. Brown Sugar
1 to 2 Drops Tabasco or other hot sauce
1/4 tsp. Ground Ginger1/5 tsp. Salt
1/2 tsp. Paprika
1/3 cup Orange Juice
1/2 Orange, thinly sliced
Spray heavy fry pan with Pam and brown chicken.
Dissolve flour in the water, add all other seasonings and the orange juice. Pour over chicken; stir to pick up browned bits and to thicken sauce slightly. Cover, simmer for 10 minutes until chicken is done.
Add orange slices and heat for a minute and serve.
Serve with rice and stir fried vegetables. Compliment with a side salad.
