Recipe(tried): Lemon Curd I and II
Misc.Mishari, here are two recipes for this,: I like both equally!
LEMON CURD I
(I use this as a filling in sandwich cookies)
1 egg, slightly beaten
Grated peel of one lemon
2/3 cup sugar
3 Tblsp. lemon juice
1 1/2 Tblsp. soft butter ( NO substitute)
Blend all ingredients in top of double boiler over hot simmering water abd cook, stirring constantly, until thick, Chill until firm.
LEMON CURD II From New McCall's Cookbook
3 eggs, beaten with fork
3 Tblsp grated lemon rind
2 Tblsp lemon juice
3/4 cup butter, softened (No substitute)
1 cup sugar
Mix all in top of double boiler and cook over simmering water until thickened, stirring constantly. Refrgerate until firm. Store in refrigerator.
Can be used as tart filling or spread on thin toast for tea.
