Recipe: Lemon Delicacy from Johnny Carino's

I just had the Lemon Delicacy tonight and it was sublime. It seems to be a simple lemon sponge cake recipe - you could bake it in round ramekins as well as the lovely bombe shape that they use. After it has cooled and been removed from the ramikin, you can push a lemon bavarian or thickened pastry cream through the bottom with a pastry bag. I do have a good recipe for the glaze:

LEMON GLAZE

1/2 cup freshly squeezed lemon juice
2 cups confectioners' sugar, sifted
1 lemon, zest finely grated
1 tablespoon unsalted butter

Stir together lemon juice and confectioners' sugar. Microwave for a minute or two, stir again. Microwave until very warm but not hot, then whisk in lemon zest and butter.

Pour warm glaze over dessert and serve.
