Recipe: Lemon-Herb Baked Chicken Breasts (food processor)

LEMON-HERB BAKED CHICKEN BREASTS

3 cloves garlic
1/4 cup fresh basil leaves
1/4 cup fresh parsley leaves
2 tablespoons fresh mint leaves
1/2 teaspoon salt
1 tablespoon extra-virgin olive oil
2 tablespoons lemon juice
1 teaspoon grated lemon zest
4 bone-in chicken breasts (about 2 pounds)

Preheat oven to 375 degrees F. Coat a jelly-roll pan or baking sheet with cooking spray.

Mince garlic in food processor; add basil, parsley and mint and mince finely. Add salt, olive oil, lemon juice and zest and combine. Toss with chicken.

Place the chicken on the baking sheet; bake until a meat thermometer stuck in the center of the thickest breast registers 160 degrees, about 35 minutes.

Makes 4 servings
