Recipe: Lemon Poppy Seed Muffins with Lemon Icing (using cake mix and pudding mix)

4 eggs
1 package lemon cake mix
1 (4-serving size) package instant lemon pudding mix
1 cup water
1/2 cup vegetable oil
1/4 cup poppy seeds
FOR THE ICING (OPTIONAL):
1/4 cup powdered sugar
4 tablespoons milk
1/2 teaspoon lemon juice
Preheat oven to 350 degrees F. Grease 20 muffin pan cups.
Beat all muffin ingredients together except poppy seeds. Stir in poppy seeds and pour into greased muffin tins, filling to half full.
Bake at 350 degrees F for about 25 minutes. Let cool.
TO MAKE THE ICING:
Mix powdered sugar, milk and lemon juice together until smooth. Spread icing on cooled muffins.
Makes 20 muffins
