COCOONS (PECAN COOKIES)
2 cups butter, softened
5 tbsp. sugar
2 cups flour, sifted
2 tsp. vanilla
2 cups chopped pecans
Powdered sugar
Cream butter and sugar together. Add flour then fold in vanilla and pecans. Roll into oblong shapes about the size of your small finger.
Bake at 350 degrees until lightly brown. Cool, then roll in powdered sugar. Y
Makes about 3 dozen
PECAN PUFFS
1/2 cup butter or margarine, softened
2 tbsp. sugar
1 tsp. vanilla
1 cup pecans, grind or finely crush
1 cup cake flour
Cream butter until light and fluffy. Then add sugar and vanilla. Add flour and pecans to butter mixture. Shape into small oblong forms.
Bake on greased cookie sheet in slow oven (300 degrees) for about 25-30 minutes.
Roll in powdered sugar while hot and again when cool.
PECAN DREAMS
1 cup butter or margarine, softened
6 tbsp. powdered sugar
2 tsp. water
1 tsp. vanilla
2 cups flour
1 cup pecans, coarsely broken
Powdered sugar for rolling
Cream butter and sugar well. Add water and vanilla. Add flour and pecans. Chill dough.
Shape into oblong pieces in the palm of your hand. Place on ungreased cookie pan.
Bake at 375 degrees for about 25 minutes. They should be set, but not brown.
While still warm, roll in powdered sugar. Cool. Roll in powdered sugar again.
