Recipe(tried): Mid-West Style Pork Tenderloin Sandwich
SandwichesTammy, I am originally from Galesburg, IL. Have relatives that have always lived in Peoria. Do not recall the restaurant you are referring to, but here is the tenderloin sandwich recipe that I frequently use. There are more complex ones (if you want them, let me know):
PORK TENDERLOIN SANDWICHES ALA' MIDWEST STYLE
4 boneless pork loin slices (1/2-inch thick), tenderized
4 tablespoons flour (for dusting)
1 egg, beaten in 4 tablespoons half and half or milk
4 tablespoons cracker meal or dry bread crumbs (for dusting)
FOR SERVING:
4 hamburger buns
yellow mustard (to taste)
salt and pepper (to taste)
dill pickle slices (to taste)
Ask the butcher to mechanically tenderize the pork loin slices.
Dip in flour and then in a mixture of the egg and half and half then in cracker meal.
Fry over medium high heat till golden brown on both sides.
Servings: 4
