LEMON TAHINI DRESSING
1/2 cup tahini
3/4 cup water
juice of 2 lemons
2 teaspoons honey
2 tablespoons mayonnaise or vegetable oil (optional)
1/2 teaspoon salt
freshly ground black pepper (to taste)
1/2 teaspoon toasted sesame oil (to taste, optional)
In a glass jar with a tight-fitting lid, combine all of the ingredients. Cover tightly and shake until smooth. The tahini will clump at first, but it will dissolve while you continue shaking.
Alternately, place all of the ingredients in a food processor and process until smooth. For a thinner dressing, add more water and/or lemon juice.
