I made this last night and although it is not gourmet cooking, the kids liked it and it was quick and easy!

Bean and Biscuit Bake
Recipe By : Bush's Best Baked Beans
Serving Size : 6

1 pound ground beef or ground turkey
1 (28 oz.) or 2 (16 oz.) cans of Bush's Baked Beans
1 onion, diced
1 tablespoon vegetable oil
1 cup milk
1 tablespoon flour
1 1/2 teaspoons seasoned salt
1/4 teaspoon black pepper
1 package refrigerated biscuit dough

1. Preheat oven to 450 degrees. Heat oil in a large skillet. Saute ground meat and onion until meat is browned.
2. Add Bush's Baked Beans, milk, flour and seasonings and simmer for 3 to 5 minutes until sauce is thickened. Pour into an 8x8 inch baking dish.
3. Place uncooked biscuits on top of bean mixture. Bake for 10-12 minutes or until biscuits are lightly browned.

Banana Jam

2 T. corn starch
1 (6 oz.) can frozen apple juice concentrate, thawed and undiluted
3 c. sliced ripe bananas
3 T. lemon juice
2 whole cloves
1 -- 2" stick cinnamon

Combine corn starch and apple juice concentrate in a heavy saucepan. Stir
until smooth. Add remaining ingredients, stirring well. Cook over medium
heat, stirring constantly, until thickened and bubbly. Cook an additional 3 to
5 minutes. Remove cloves and cinnamon stick; discard. Quickly spoon banana
mixture into hot sterilized jars, leaving 1/4" head space. Cover at once with
metal lids, and screw bands tight. Cool. Store jam in refrigerator.
Yield: 2 half pints. (About 23 calories per tablespoon)

Banana Jam

1-1/2 c. sliced bananas
3/4 c. sugar
3 tablespoons orange juice
5 teaspoons lemon juice
1 small cinnamon stick
1 whole clove

Combine all ingredients in a 2-quart saucepan. Stir over moderate heat until
sugar dissolves. Boil rapidly 5 minutes, reduce heat and simmer, stirring
constantly until thickened, about 10 minutes. Pour into small jars or other
container, cool and store in refrigerator.
Yield: about 1-1/2 cups.
Good on toast, waffles, gingerbread or as a filling for spice cake.

Banana Crunch Cake

1/2 cup flour
1 cup shredded coconut
1 cup rolled oats
3/4 cup brown sugar, packed
1/2 cup pecans
1/2 cup butter, cut into pieces
1 1/2 cups very ripe bananas, thinly sliced
1/2 cup sour cream
4 eggs
1 package Pillsbury Moist Supreme Yellow Cake Mix

Heat oven to 350 F. Grease and flour 10-inch bundt pan. In bowl, combine
flour, coconut, rolled oats, brown sugar, and pecans; mix well. Using fork
or pastry blender, cut in butter until mixture resembles crumbs. Set aside.
In another bowl combine banana slices, sour cream and eggs; mix until smooth
at medium high speed(the banana slices will be totally incorporated;
otherwise the bananas used were not ripe enough). Add the Pillsbury Moist
Supreme Yellow Cake Mix, mix 2 minutes at high speed. Spread 1/2 of batter in
greased pan; sprinkle with 1/2 of coconut mixture. Repeat again, ending with
coconut mixture. Bake for 45-50 minutes or until inserted toothpick comes
out clean.

Carolyn-NJ (08:59:16) : Banana Pineapple Bread

2 cups sugar
3 eggs
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
2 cups flour
1 cup vegetable oil
8 oz. can crushed pineapple, drained
2 large ripe bananas, diced
1 cup chopped walnuts

Drain pineapple. Mix all ingredients in a large mixing bowl with wooden spoon (mixer may be used). Pour mixture into two greased and floured loaf pans or 5 mini-loaf pans. Bake at 350 degrees about 50-60 minutes for larger loaves; about 30-40 minutes for mini-loaves.

Carolyn-NJ (08:48:54) : BABY QUICHES

You can make these ahead and freeze them. They're snapped up quickly any time I make them.

Shells:
1/2 cup butter or margarine
1 3-oz pkg cream cheese
1 cup flour

Cream the butter and cream cheese together, then work in the flour. Chill the dough for a little while if dough is too soft. Roll into 24 balls and press each one into a miniature muffin tin, making a shell.

Filling:
1 large egg, slightly beaten
1/2 cup milk
1/4 tsp salt
1 cup grated Swiss cheese

Combine the egg, milk and salt. Divide the cheese among the little shells. Spoon the egg mixture in (using a tablespoon from my flatware set divides the egg mixture evenly for 24 appetizers). Bake at 350 degrees for about 30 minutes.

To freeze, cool the baby quiches, place on a cookie sheet and place in freezer for about 20 minutes. SET TIMER and then package in zip-lock freezer bags. To reheat from frozen stage, place on a cookie sheet and bake about 10-15 min. (I adjust time to whatever temperature the oven might be set at - if oven is higher temp, just check on them sooner.)

1/2 c Onion -- Chopped, 1 Medium
2 T Margarine Or Butter
12 oz Beer -- Any Brand, 1 Btl/can
1/2 c Carrot -- Finely Chopped
1/2 c Celery -- Finely Chopped
2 c Chicken Broth
1 t Salt
1 t Cumin -- Ground
1/4 t Nutmeg -- Ground
1 x Cloves -- Ground, Dash of
1 x Pepper -- Dash Of
1 c Dairy Sour Cream

-----GARNISH-----
1 c Cheese -- *

* Use Cheddar Or Monterrey Jack cut into 1/4-inch Cubes. (4 oz)

Cook and stir onion in margarine in 2-quart saucepan until tender.
Stir in beer, carrot and celery. Heat to boiling; reduce heat. Cover and
simmer 10 minutes. Stir in remaining ingredients except sour cream and
cheese. Heat to boiling; reduce heat. Cover and simmer for 30 minutes.
Remove from heat; stir in sour cream. Sprinkle with cheese.

Yield: 6 servings

1 med Butternut
1 squash, peeled and Cubed
2 tb Butter
1/2 c Brown sugar
1 Egg, beaten
1/2 c Evaporated milk
1/4 c Toasted almonds, sliced

Cook the squash in salted boiling water until tender
and drain very well. Mash with butter, then add brown
sugar and mix well. Add beaten egg, then evaporated
milk. Pour into a greased 1-1/2 quart casserole dish
and sprinkle toasted almonds on the top. Bake for 30
minutes at 325 degrees.

4 cups thinly sliced zucchini -- about 3 medium
1 medium onion -- sliced
2 Tablespoons butter or margarine
1/4 cup grated Parmesan cheese
1 1/2 pounds lean ground beef
1 Tablespoon flour
1 teaspoon salt
1/8 teaspoon pepper
2/3 cup ketchup
1/4 cup grated Parmesan cheese

In large skillet, saute zucchini and onion in butter until onion is tender. Pour into baking dish (10x6x1 1/2"); sprinkle with 1/4 cup Parmesan cheese; set aside. In same skillet, brown ground beef; drain excess fat. Stir flour, salt, pepper, then ketchup into meat. Spoon meat mixture evenly over zucchini. Cover; bake in 350 oven 20 minutes. Remove cover; top with 1/4 cup Parmesan cheese; bake, uncovered, and additional 5 minutes or until cheese is lightly browned. Cut into squares to serve. Makes 6 servings.

6 oz Cream cheese w/chives
1 T Milk
25 slices mixed grain sandwich bread
25 slices bacon cut in halves

Combine milk and cheese. Stir to spreading consistency. Spread about 2 teaspoons on each side of bread, thin cut in 2 pieces. Roll bread and wrap with bacon. Place on broiler pan. bake at 350F for 30 minutes or until bacon browns. These freeze well. thaw before cooking. Yields 50.

1 c Flour
1 c Sugar
1 c Milk
1 t Vanilla
1 Egg
1 Stick of butter
16 oz Blueberries

Melt butter in a 9x13 inch baking dish. Add all ingredients except the blueberries in a large mixing bowl. Mix well; then, when margarine is melted, pour the ingredients into the baking dish. Add the blueberries. Don't mix them in; just add them. Bake at 350 degrees.

3/4 cup orange juice
1 teaspoon vanilla
4 ripe bananas -- peeled
1/2 cup flour
1/2 cup quick-cooking oatmeal
3/4 cup brown sugar
1/2 teaspoon nutmeg
1/2 teaspoon salt
6 tablespoons cold butter -- cut into 6 pieces

Combine orange juice and vanilla; set aside. Slice bananas lengthwise and place cut side up in four buttered baking dishes. Combine flour, oatmeal, brown sugar, nutmeg and salt. Add butter. Using a pastry blender or two knives, blend until mixture resembles small peas. Drizzle bananas with orange juice mixture. Spoon crumble mixture over fruit. Bake at 375F for 15-20 minutes. Serve warm with vanilla ice cream or whipped cream.

2 cups sugar
2 cups water
1 teaspoon vanilla
1/2 teaspoon lemon juice
1/4 cup butter
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 cups black berries and blue berries, mixed
1/3 cup milk

Stir sugar and water over medium heat until sugar dissolves; add vanilla and lemon juice and set aside. Add milk to dry ingredients; stir. Turn out on floured board; roll into 9x12" rectangle. Spread with berries; roll up from long side and slice into 12 pieces. Melt 1/2 cup butter in a 9x13-inch pan. Place rolls in pan. Pour sugar syrup over rolls and bake one hour at 350 degrees.
NOTE: may use apples or peaches but reduce sugar by 1/2 cup.

2 bunches chopped broccoli
1 cup cheddar cheese -- cut into small cubes
1/2 cup onion -- cut into small piece
1/2 pound bacon -- fried broken
1 cup raisins

1/2 cup sugar
1 cup mayonnaise
2 tablespoons vinegar

Combine first 5 ingredients in bowl. Mix up dressing ingredients and pour over salad. Refrigerate until time to serve.

1 lb Beets
1 tb Sugar
1 Lemon -- juice of
1 tb Olive oil
1 Pinch cinnamon
1 tb Chopped parsley
Salt -- to taste

Wash beets well, being careful not to break their skins. Cut off the tops, leaving a stalk of about 1 1/2". Boil in a 3 quart saucepan until tender, covered. Allow the water to cool, then slip off the skins, trim off the tops, and cut into bite-sized pieces.

Mix the remaining ingredients and pour over the beets. Let marinate for 1 hour before serving.

1 can green beans
1 can yellow beans
1 can garbanzo beans
1 can red kidney beans
2 medium onion
1 green pepper
1 stalk celery

---dressing---
1/3 cup salad oil
2/3 cup vinegar
3/4 cup sugar
1 teaspoon salt

Drain all beans and put in large bowl. Chop onion, green pepper and celery and mix with beans. Pour dressing over and stir well.

Serving Size 6

11 Oz Mandarin Oranges
13 Oz Pineapple Chunks In Juice
1/4 C Maraschino Cherries
2 C Miniature Marshmallows
1/2 C Sour Cream

6 Bananas
Lettuce Leaves
Coconut
6 Maraschino Cherries -- with stems

Mix fruits, toss in sour cream. Split bananas lengthwise. Place on lettuce lined plates. top each with a scoop of fruit mixture. Sprinkle with coconut. Garnish with maraschino cherry if desired.
