Recipe(tried): Light Eggplant Parmigiano - I made this a couple of weeks ago

We really enjoyed it, thanks Maureen. A friend Italian heritage happened to be hanging around and joined us for dinner. He was skeptical because I used a tinned sauce (jar of Classico brand tomato and pesto sauce), and he had never seen the eggplant "fried" in the oven before. I used a bit of provolone (we go pretty light on the cheese around here, just enuf to glue it together. Definitely not yo mama's recipe, but in a good way! It was light and delicious, not weighed down with too much fat. I served it with some hot Italian sausages, broiled up with big slices of sweet onion and fennel root.

Anyway, we will be making it again soon. Thanks so much, Maureen. Your recent sambal post looks awesome, too.
