Recipe(tried): LoCal Black Beans & Rice

This is excellent. From The Good Book of Nutrition, American Cancer Society

Black Beans and Rice

l lb dried black beans, washed and drained
6 cups water
2 bay leaves
l/2 t salt (optional)
l/4 t pepper
4 ounces lean turkey ham, chopped
2 T olive oil
l cup onion, chopped
l green bell pepper, chopped
l clove garlic, crushed
4 cups hot cooked rice

In a large saucepan place beans and enough water to cover. Bring to a boil. Boil for 2 minutes; remove from heat.Cover. Let stand for l hour, drain.
Add water, bay leaves and ham. Simmer for 2 hours. In small skillet heat olive oil, add onion, green pepper and garlic. Add to beans. Serve over rice.
