Substitute for Sherry...

Olivia, I have looked through several recipes for Black Beans and several do call for sherry and don't offer a substitute. However, one I have made is Maida Heatter's Cuban Black Beans and Rice, and she uses rum instead of sherry. I am thinking you could substitute a little rum flavoring for the sherry. Perhaps your teacher would advise you with that, since she doesn't want you to use the sherry. The other alternative would be just to omit the sherry. Many of my recipes have neither rum or sherry in them. Good luck with your project, am sure it will be delicious what ever you decide to do.
