Recipe: Long John Silver's Batter Dipped Fish, Arthur Treacher's Fish Batter

Long John Silver's Batter Dipped Fish
3 Cups Soybean oil
2 lb Fresh cod fillets
1 Cup Self-rising flour
1/3 Cup Dry Mustard
1 Cup Water
1 Egg
2 Teas Granulated sugar
2 Teas Salt
Sift together mustard and flour.Heat oil to 400. Cut the fish into approximately 7x2" wedges.With a mixer blend the flour mixture, water, egg, sugar, and salt.Dip each fillet into the batter coating generously and quickly drop in the oil. Fry each fillet until dark golden brown about 5 mins.Remove and drain. Soybean oil and mustard flour are the secrets here. Thanks to Chad for his help with this recipe. It should now be pretty close to the real thing
Arthur Treacher's Fish Batter
3 lb Fish Fillets
2 Cups All-purpose flour
3 Cups Pancake mix
3 Cups Club soda
1 Tablespoon Onion powder
1 Tablespoon Seasoned salt
Dip moistened fish pieces evenly but lightly in the flour.Dust off any excess flour and allow pieces to air dry on eaxed paper, about 5 minutes.Whip the pancake mix with the club soda to the consistency of buttermilk- pourable,but not too thin and not too thick. beat in the onion powder and seasoned salt.Dip floured fillets into batter and drop into 425 oil in heavy saucepan using meat thermometer.Brown about 4 minutes per side. Arrange on cookie sheet in 325 oven until all pieces have been fried.
