Recipe(tried): Tennessee T Cakes (copycat recipe)

TENNESSEE T CAKES (copycat recipe)

4 oz butter
1 1/3 cup firmly packed dark brown sugar
1 egg
1 egg yolk
1 1/2 teaspoon vanilla
1 1/2 teaspoon cinnamon
5 oz (1 cup plus 2 tablespoons) Swan's Down Cake Flour
1/4 teaspoon salt

Preheat oven to 350 degrees F. Line mini muffin pan with paper or tin foil mini liners.

Heat butter and brown sugar in a medium saucepan over medium heat stirring until the sugar has dissolved. Cook 1 minute more after the sugar has dissolved. Set aside and cool for about 10 minutes.

Stir the egg, egg yolk, vanilla, and cinnamon into the cooled mixture. (Temper this mixture or you will get bits of scrambled egg), Add flour and salt, stirring just to blend. Pour the batter into the lined muffin pan (3/4 full in each muffin tin).

Bake at 350 degrees F for 10-15 minutes until set (do not overcook).

**After tasting these, (a cross between a muffin and a blonde brownie) I really could care less about the original Tennessee Tea Cake!! These are awesome beyond words!
