Recipe #1 - Shrimp Cocktail

Ingredients:
1 pound shrimp
6 tbsp. chili sauce
2 tbsp. lemon juice
1/2 tbsp. horseradish
1/4 teaspoon grated onion
1 tsp. Worcestershire sauce
salt
1/3 cup finely chopped celery
Crisp salad greens (2 cups leaves)
lemon wedges

Instructions:
Cook and clean shrimp. cover and chill. Combine chili sauce, lemon juice,
horseradish, onion,
and Worcestershire sauce to make cocktail sauce. Stir. Salt to taste. Mix
chilled shrimp with
celery. Line cocktail cups with salad greens. Spoon in shrimp mixture. Spoon
on some sauce.
Garnish with lemon wedges.

Total Carbohydrates: 16.5 grams

Recipe #2 - Italian Chicken
Ingredients:
6 boneless, skinless chicken breast halves
1/2 cup Italian salad dressing

Instructions:
In a shallow dish, pour dressing over chicken. Cover and marinate in the
refrigerator up to 3
hours. Remove from refrigerator, bake chicken in the marinade at 425 degrees
for 20 minutes
or until chicken is no longer pink.

You can also grill this recipe, after marinating, discard marinade, and use
another 1/4 cup of
dressing to brush on chicken while cooking. Cook until chicken is no longer
pink inside.

Recipe #3 - Broccoli and Chicken Casserole

Ingredients:
4 cooked chicken breasts
1 can cream of chicken soup
1 pkg. frozen broccoli, cooked until just tender
1 tsp. lemon juice
2 cups grated cheese
1 Tbsp. butter
1/4 tsp. salt
1/8 tsp. pepper
8 pieces of bacon, cooked crisp and crumbled

Instructions:
Mix together soup, salt, pepper, lemon juice, 1 cup grated cheese and
butter. Debone chicken
and cut into bite size pieces. Layer chicken and broccoli in baking dish.
Add sauce. Top with
bacon crumbles and bake at 350 degrees for 30 minutes. Add remaining cheese
and bake until
cheese melts.
Carbohydrate count: 30.5 4 servings = 7.6g each

Recipe #4 - Noodleless Goulash

Ingredients:
2 pounds ground beef
2 cups shredded cheddar cheese (6 oz.)
1 cup of Contadina Italian herbs tomato sauce
1/2 cup water
1 tsp. ground red pepper
salt

Instructions:
Brown ground beef in skillet. Drain. Add tomato sauce and water. Mix well
and let simmer
about 15 minutes (until most of the water has gone). Put some meat on your
plate, top with

Recipe #5 - Taco Salad

Ingredients:
2 pounds ground beef
1/2 pkg. Old El Paso taco seasoning
3/4 cup water
2 cups of chopped lettuce
2 cups shredded cheddar cheese (6 oz)

See instructions for other ingredients to add...

Instructions:
Brown ground beef in skillet. Drain. Add taco seasoning and water, mix well,
and simmer until
water is almost gone (10 - 15 min). Put meat on a bed of lettuce, top with
cheese.
Carbohydrate count: 15

Other additions: sour cream - 2 Tbsp=2 carbs, picante sauce- 3Tbsp=3 carbs,
tomatoes-1/2 cup
diced tomato= 4.2 carbs, olives-1/4 cup slices= 3 carbs

Recipe # 6 - Fried Okra
Ingredients:
1 & 1/2 cups of frozen okra
1/4 cup soy powder
1/2 tbsp. canola oil
Canola oil

Instructions:
Put frozen okra in a container that has a lid. Add in soy powder, and 1/2
Tbsp. oil, put top on
and shake until coated. Pour enough oil in skillet to cover bottom. Fry okra
until browned on
both sides.
Enjoy!

Recipe # 7 - Meat Loaf

Ingredients:
2 pounds ground beef
1 envelope of onion soup mix
1/2 cup heavy cream plus 3 tbsp. water
1 egg
3 tbsp. brown sugar equivalent
3 tbsp. tomato sauce
1 tbsp. prepared mustard

Instructions:
Heat oven to 350 degrees. Mix ground beef, onion soup mix, milk and egg.
Press mixture firmly
in ungreased loaf pan. Loosen edges with a spatula and unmold loaf in
ungreased rectangular
baking pan 13x9x2 inches. Mix remaining ingredients: spoon onto loaf. Bake
uncovered 1 hour.
Total carbohydrates: 25 grams 8 servings - 3.5g per serving

Recipe # 8 Puffy Omelet
Ingredients:
4 eggs, separated
1/4 cup water
1/4 teaspoon salt
1/8 teaspoon pepper
1 tbsp. butter

Instructions:
Beat egg whites, water and salt in small mixer bowl until stiff but not dry.
Beat egg yolks and
pepper in another bowl until very thick and lemon colored, about 5 minutes.
Fold into egg
whites.

Heat butter in 10-inch ovenproof skillet until hot enough to sizzle drop of
water. Pour omelet
mixture into skillet; level surface gently. Reduce heat. Cook slowly until
puffy and light brown on
the bottom, about 5 minutes. (Lift omelet at edge to look at color.) Cook
uncovered in 325
degree oven until knife inserted in center comes out clean, 12 to 15
minutes.

Tilt skillet; slip pancake turner or spatula under omelet to loosen. Fold
omelet in half, being
careful not to break it. Slip onto warm plate.

Recipe #9 - Fried Onion Rings

Ingredients:
3 two and a half inch onions
Vegetable Oil
1/2 cup half and half
1 egg
3/4 cup soy powder
1/2 teaspoon salt
dash garlic salt
dash pepper

Instructions:
Cut onions into 1/4 inch slices and separate into rings. Heat oil (1 inch)
in 3 quart saucepan to
375 degrees. Beat remaining ingredients with hand beater until smooth. Dip
each ring into
batter, letting excess drip into bowl.
Fry a few onion rings at a time in hot oil, turning once, until golden
brown, about 2 minutes;
drain.
Carbohydrate count: 47g for the whole recipe - please divide into your own
servings

Recipe #10 - Grilled Picante Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 cup picante sauce
4 tsp. Dijon mustard

Instructions:
Mix picante sauce and mustard. Marinate chicken in mixture for about 5 hours
in the refrigerator
(or longer if desired). Place on grill when hot enough. Brush marinade on
chicken, turn after five
minutes and brush marinade on other side. Do not use the marinade after the
first few minutes,
because the marinade could contain raw chicken juices. Chicken takes about
15 minutes to
cook, until no longer pink inside.

Recipe #11 - Fried Chicken

Ingredients:
4 chicken breasts
1 cup soy powder
1 egg
salt, pepper

Instructions:
Coat chicken breasts with egg. Mix salt and pepper in the soy powder. Coat
chicken with soy
powder mixture. Place in skillet with enough oil to cover about halfway up
the chicken. Make
sure the oil is hot before you place the chicken in the skillet. Don't turn
it over for a couple of
minutes so the mixture will stick to the chicken. Cook covered on medium low
heat for about 30
minutes (until no longer pink in the middle). Turn over occasionally.

Recipe # 12 - Shish Kebobs

Ingredients:
2 pounds cubed beef
1 pound mushrooms
1 cup cherry tomatoes
1 cup baby onions
2 green peppers, quartered
1/2 cup salad oil
1 clove garlic
1/4 cup vinegar
1/2 tsp Dales Steak Sauce
1/2 tsp. basil
1 tbsp. lemon juice

Instructions:
Marinate beef in oil, vinegar, steak sauce, garlic, lemon juice, basil, salt
and pepper to taste for
about 4 hours. Place on skewer alternating with mushrooms, onions, green
peppers, and
tomatoes. Roast or grill basting with marinade.
Serves 6 at 9g each

Recipe #13 - Onion Cheeseburger

Ingredients:
1 package Lipton Onion Soup Mix
2 pounds ground beef
4 slices American cheese

Instructions:
Place ground beef in bowl. Add in onion soup mix; mix well. divide mixture
into four burgers.
Fry or grill until juice is no longer pink, or the middle is no longer pink
(I don't always trust the
juice color). When almost done, place cheese on top and let it melt. Serve
with vegetables or
fried pork skins (what I use as a chip substitute).

Recipe # 14 - Pepper Steak

Ingredients:
1 pound round steak cut 1/2 inch thick
2 Tbsp. oil
1 medium onion, sliced
1 medium green pepper, sliced
2 Tbsp. soy sauce
dash garlic salt
1/4 cup water
2 cups shredded carrots (about 4 medium carrots)

Instructions:
Cut meat in half lengthwise with a sharp knife, then crosswise into thin
slices. Brown meat in hot
oil, then add onion and pepper; cook 1 to 2 minutes. Stir in soy sauce,
water, and sprinkle on
garlic salt, and cook about 5 minutes, stirring constantly. Serve on a bed
of shredded carrots.

Recipe# 15 - Cheesy Meatballs

Ingredients:
1 pound ground beef
1/4 tsp. garlic salt
1/4 tsp. ground red pepper
1/4 cup finely chopped onion
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese

Instructions:
Mix ground beef, onions, garlic salt, and red pepper. Form into balls and
brown on all sides until
no longer pink in the middle. Serve on a plate with both kinds of shredded
cheese sprinkled on
top. Yummy!

Recipe # 16 - Swedish Meatballs

Ingredients:
2 pounds ground beef
1/4 cup soy powder
1/4 cup finely chopped onion
1/4 cup half and half
3 tbsp. snipped parsley
1 tsp. salt
1 teaspoon Worcestershire sauce
1/4 tsp. ground allspice
1/2 tsp. grated lemon peel
2 eggs
Sour Cream Sauce (next recipe)

Instructions:
Mix all ingredients except Sour Cream Sauce. Shape into 1&1/4 inch balls.
Place meatballs on
rack in broiler pan. Bake in 375 degrees oven until brown, 20 to 25 minutes;
keep warm.
Prepare sauce; pour over meatballs. Serve hot.

Recipe #17 - Sour Cream Sauce

Ingredients:
3 Tbsp. butter
3 Tbsp. soy flour
1 & 1/2 cups beef broth
1 & 1/2 tsp. dried dill weed
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/2 cup dairy sour cream

Instructions:
Heat butter in 1-quart saucepan over low heat until melted. Stir in flour.
Cook, stirring constantly,
until smooth and bubbly; remove from heat. Stir in broth, dill weed, salt
and nutmeg. Heat to
boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir
in sour cream.

Recipe #18 - Deviled Egg Delight

Ingredients:
4 eggs - hard boiled
3 pieces of bacon, cooked and crumbled
2 oz cheese, shredded
1 Tbsp. mayonnaise
pepper
salt
paprika

Instructions:
Split eggs evenly down the middle, lengthwise. Take out the yolk and place
it in a small bowl.
Put whites to the side. Mix yolk, mayonnaise, bacon and cheese together.
Salt and pepper to
taste. Take mixture and fill the egg whites. Sprinkle paprika on top.

Recipe #19 - Cocktail Meatballs

Ingredients:
1 pound ground beef
1 egg, slightly beaten
2 Tbsp. soy powder
1/2 tsp. salt
1/2 cup finely chopped onion
1/3 cup finely chopped green pepper
2 Tbsp. butter
1 cup tomato sauce
2 Tbsp. brown sugar substitute
1 Tbsp. vinegar
1 Tbsp. Worcestershire sauce
1 tsp. prepared mustard
dash hot pepper sauce
Instructions:
Mix thoroughly beef, egg, soy powder and salt; shape into 50 small 1/2 inch
meatballs. Arrange
in shallow baking pan (12 x 8 x 2 inches). Broil 4 inches from heat until
browned; turn once.
Pour off fat. Meanwhile, in sauce-pan, cook onion and green pepper in butter
until tender. Add
meatballs and remaining ingredients. Cover; cook over low heat 10 minutes.
Stir occasionally.

Recipe #20 - Fried Eggplant
Ingredients:
1 medium eggplant
salt
1 egg, beaten
1/4 cup milk
soy powder

Instructions:
Wash eggplant and cut in slices about 3/4 inch thick. Peel each slice and
cut into strips.
Sprinkle strips with salt. Combine 1 beaten egg with milk. Roll strips in
soy powder. Dip in egg
mixture and roll again in soy powder. Allow coating to dry some before
frying. Fry in deep fat at
375 degrees. Drain on absorbent paper. Sprinkle with salt and serve hot.
Total Carbohydrate: Approx. 11 g
Divide into servings.

Recipe #21 - Cheese Steaks
Ingredients:
1 Tbsp. fat
2 Tbsp. grated onion
4 cubed beef steaks
1 cup tomato sauce
1 teaspoon sugar substitute
1/4 teaspoon basil
1 teaspoon salt
1/4 cup grated parmesan cheese
Instructions:
Melt fat in a skillet. Add onions and cook over medium heat until tender but
not brown. Brown
steaks on both sides. Put steaks and onions in a 1-quart covered casserole.
Combine soup,
sugar, basil, and salt. Stir until well blended. Pour soup mixture over
steaks. Cover tightly and
bake at 350 degrees 1 hour or until steaks are tender. Sprinkle with cheese
before serving. (you
can also do this with chicken - yummy) Total Carbohydrates: 18g 4 servings

Ingredients:
3 pounds ground beef
1/2 pkg. Old El Paso chili seasoning mix
1 cup water
1/2 cup chopped onion
1 cup tomato puree
1/4 cup green chili peppers
3 cups shredded cheddar cheese
1 tsp. ground red pepper

Instructions:
Brown ground beef with onions. Drain. Add in seasoning mix, ground red
pepper, green chili
peppers, tomato puree, and water. Let simmer about 15 minutes. Put in
casserole dish, sprinkle
cheese on top and bake at 400 degrees F. until cheese melts.

Ingredients:
1 stick of butter
1/4 cup vinegar
1 cup tomato sauce
2 Tbsp. Worcestershire
1/2 Tbsp. hot sauce
1/2 Tbsp. salt

dash red pepper
2 tsp. lemon juice
1 tsp. hickory liquid smoke
4 tsp. Sugar Twin

Instructions:
Melt butter, add vinegar and then other ingredients. Stir until well
blended. Bring to a boil, lower
heat, and let simmer a few minutes.

Recipe #24 - Swiss Steak

Ingredients:
3 Tbsp. pure vegetable oil
2 pounds round steak, 1-inch thick
1/4 cup soy flour
1 envelope dry onion soup mix
one 8-oz can Hunt's tomato sauce
1/2 cup water

Instructions:
Pour oil in 7&1/2 x 12 x 1&1/2-inch baking dish. Place in oven at 400
degrees. While dish and
oil heat, trim steak and pound 2 Tbsp. soy flour into each side. Place in
heated baking dish; turn
to coat both sides. Sprinkle on soup mix. Pour tomato sauce mixed with water
over all. Cover
tightly. Reduce oven temperature to 325 degrees F. Bake 2&1/2 to 3 hours
until fork tender.
Skim excess fat from gravy.

Recipe #25 - Skillet BBQ Pork Chops

Ingredients:
6 pork chops, 1/2 inch thick
1 Tbsp. salad oil
1/2 cup water
1/4 cup Kikkoman Teriyaki sauce
1/4 cup tomato sauce
4 tsp. brown sugar substitute

Instructions:
Brown chops slowly in hot oil on both sides, drain. Combine 1/2 cup water
with next 3
ingredients; pour over chops. Cover and simmer 30 minutes; turn chops over
and cook 30
minutes longer.

Recipe #26 - Pot Roast

Ingredients:
1 pkg. Onion soup mix
3 pound lean beef pot roast
3 cups water

Instructions:
Mix onion soup and water. Pour into crock pot. Add roast, sprinkle with salt
and pepper, cook
overnight or until tender.
Total carbohydrates: 10g

Another variation is to put 2 cups water and 1 cup Dale's Steak Seasoning in
pot in place of
onion soup and water.
Total carbohydrates: 8g

Ingredients:
1 cup tomato sauce
3 tbsp. Worcestershire sauce
2 tsp. Brown Sugar Twin
2 tbsp. vinegar
1 tsp. liquid smoke
6 tsp. Sugar Twin

Instructions:
Mix all ingredients and cook over low heat for 10 minutes.
Total Carbohydrates: approx. 15 (Less than 1g per Tbsp.)

Ingredients:

12 oz. shredded cheddar cheese
1/2 cup soy flour

Instructions:
Preheat oven to 325 degrees F. Mix ingredients well and roll into small

Ingredients:
1 cup heavy cream
1/4 cup water
2 eggs
1 tsp. vanilla
2 pkgs. sugar substitute
dash nutmeg

Instructions:
Mix all ingredients but the nutmeg in blender. Pour into glass. Sprinkle
nutmeg on top. Total

Recipe #30- Apple Snow

Ingredients:
3 egg whites
3 tablespoons sugar substitute
2 apples (peeled and cored)

Instructions:
Beat egg white until they form soft peaks. Gradually add sugar, beating
thoroughly after each
addition. Continue beating until very stiff. Shred apples and place in bowl.
Add beaten egg
whites to apples. Fold in by cutting a spoon through egg whites and apples
and turning apples
over egg whites. Continue doing this until they are thoroughly blended. Do
not beat or stir. Chill
and serve with whipped cream. (you can use diet applesauce for this, but be
sure to add the
carbs!)

Ingredients:
1 oz. unsweetened bakers chocolate
2 Tbsp. butter
2 Tbsp. heavy cream
1/2 tsp. vanilla
5 pkgs. Equal
2 oz. peanuts (about 80)

Instructions:
Melt chocolate and butter together in a double boiler do not overheat. Stir
in cream, vanilla and
sweetener. Mix well until smooth. Stir in peanuts. Drop by spoonfuls onto a
plate and chill.
Store in refrigerator.
Total carbohydrates: 28 carbs 9 servings at 3g each

Ingredients:
1 oz. unsweetened bakers chocolate
2 Tbsp. butter
2 Tbsp. heavy cream
1/4 tsp. vanilla
7 pkgs. Equal
1/2 cup pecan halves
1/2 tsp. cinnamon

Instructions:
Put pecans, 2 pkgs. equal, and cinnamon in a bowl with a lid and shake until
coated.
Melt chocolate and butter, add in cream, vanilla, and the rest of the Equal.
Mix well until smooth.
Mix in pecans or dip them one at a time in the chocolate mixture, place
pecans on wax paper or
a plate and chill.
Total carbohydrates:24
Divide into servings.

Ingredients:
1 medium apple
1/2 stick butter
1 tbsp. cinnamon
1 tbsp. Equal or other sugar sub

Instructions:
Peel and core apple, slice into 1/4 inch thick slices. Heat butter in
skillet, add 1 teaspoon
cinnamon, place apple rings in heated butter mixture. Fry until tender. Put
on plate, cool
slightly. Mix remaining Equal and cinnamon, sprinkle on rings.

Ingredients:
5 egg yolks
3 teaspoons vanilla
8 teaspoon-equivalents sugar substitute
1/4 cup water
2 cups heavy cream, whipped
1/4 apple, diced
2 tbsp. butter
2 tsp. cinnamon

Instructions:
Take diced apple and 1 tsp. cinnamon and fry it in butter about a minute.
Cool.
Place yolks, vanilla, water and sugar substitute in small bowl and mix with
a mixer until well
blended, about 30 seconds. Pour slowly into whipped cream, mixing with mixer
after each
addition. Add apple mixture and 1 tsp. cinnamon. Mix well. Pour into freezer
tray or any
container that will do ok in the freezer. Let freeze overnight. Cut into
squares with a knife.
Enjoy!

Recipe #35 - Strawberry Ice Cream Bars

Ingredients:
5 egg yolks
3 tsp. vanilla extract
8 teaspoon equivalent sugar substitute
1/4 cup water
2 cups heavy cream, whipped
2 & 1/2 tbsp. sugar free strawberry glaze
1 cup fresh whole strawberries

Instructions:
Finely chop strawberries (unless you want big chunks of strawberries in your
dessert). Set aside.
Place yolks, vanilla, sugar substitute, and water in bowl and mix with a
mixer until well blended
(about 30 seconds). Pour slowly into whipped cream, mixing well with mixer
after each addition.
Add in sugar free strawberry glaze, mix well. Add in strawberries, mix well,
and pour into freezer
safe container. Freeze several hours or overnight. Cut into squares.
Total carbohydrates: 32 8 servings at 4g each

Variation: Chocolate
take out strawberry glaze and strawberries
replace vanilla with 1 package of sugar free chocolate pudding

Recipe #36- Fried Ice Cream

Ingredients:
5 egg yolks
3 tsp. vanilla
8 tsp. sugar substitute
1/4 cup water
2 cups heavy cream
2 tbsp. butter
2 tsp. brown sugar twin
1 tsp. ground cinnamon

Instructions:
Place yolks, vanilla and sugar substitute in small bowl and mix with a mixer
until well blended,
about 30 seconds. Pour slowly into whipped cream, mixing with mixer after
each addition. Mix
well. Pour into freezer tray or any container that is freezer safe, and
place in freezer. Let freeze
overnight.
Melt butter in small saucepan. Add in Brown Sugar Twin, and cinnamon. Place
serving of ice
cream in a bowl and drizzle some cinnamon mixture on it. Delicious!!

Ingredients:
2 pkgs. cream cheese
1/4 cup sugar substitute
2 cups heavy cream, whipped

Instructions:
Mix cream cheese and sugar substitute with mixer until blended. Add mixture

heavy cream and blend well. Pour into medium container lined with plastic
wrap. Refrigerate 2
hours. Take container and place upside down onto plate, being careful not to
spill cheesecake.
Take off container and remove plastic wrap. Top with your favorite sugar
free fruit topping.

Recipe #38- Strawberry Cheesecake
Ingredients:
2 pkgs. cream cheese
1/3 cup sugar substitute
2 cups heavy cream, whipped
3 tbsp. sugar free strawberry glaze
1 cup fresh whole strawberries

Instructions:
Mix cream cheese and sugar substitute with mixer until blended. Add mixture
into whipped
heavy cream and blend well. Add strawberry glaze, and once again mix well.
Pour into medium
container lined with plastic wrap. Refrigerate 2 hours. Take container and
place upside down

Take the strawberries and slice thinly. Spread strawberry slices on top of
cheesecake. Store in
refrigerator.

Recipe #39 - Chocolate Coconut Dream
Ingredients:
1 oz. unsweetened baker's chocolate
2 Tbsp. butter
2 tbsp. heavy cream
1/2 tsp. vanilla
5 pkgs. Equal - do not use the spoonable kind
1/3 cup shredded coconut
1 oz. almonds

Instructions:
Melt butter and chocolate together, mix well. Add in vanilla, heavy cream,
and sugar substitute,
mix until smooth. Add in coconut and once again, mix well. Drop by spoonfuls
onto a plate. Put
almonds on a plate, spaced evenly. Pour a spoonful of chocolate mixture on
each almond. Chill
for at least an hour before eating so you can pick them up.

Recipe #40 - Baked Cinnamon Apple

Ingredients:
4 apples
4 tablespoons of sugar substitute (brown or regular)
4 teaspoons butter
1/2 tsp. cinnamon

Instructions:
Core apples and pare a 1-inch strip of skin from around the middle of each
apple or pare upper
half of each to prevent splitting. Place apples upright in an ungreased
baking dish. Place 1
tablespoon sugar substitute, 1 teaspoon butter, and 1/8 teaspoon cinnamon in
center of each
apple. Pour water (1/4 inch deep) into baking dish.
Bake uncovered at 375 degrees until tender when you poke it with fork, 30 to
40 minutes.
Total carbohydrate: approx. 24 per apple (this is obviously not for the
rapid weight loss part of
the diet, but you can have them every once in a while- like when you are
maintaining)

Recipe #41 - Chocolate Peanut Butter Cookies

Ingredients:
1 /2 cup creamy peanut butter
3/4 cup heavy cream
2 tsp. vanilla
4 pkgs. sugar substitute
2 tbsp. soy flour
1 tsp. baking powder

Chocolate:
1 oz unsweetened bakers chocolate
2 tbsp. butter
2 tbsp. heavy cream
1/2 tsp. vanilla
6 pkgs. Equal

Instructions:
Preheat oven to 375 degrees. Mix everything but the chocolate ingredients in
a bowl. Blend
well. Drop onto greased cookie sheet by the spoonful. Bake about 10 minutes.
Chocolate: Melt butter and unsweetened chocolate. Mix well. Add in cream,
vanilla, and sugar
substitute. Mix until smooth.
When cookies are done, let cool. Spread chocolate mixture over each cookie.
Refrigerate 1
hour.
Total carbohydrates: 46 20 cookies at 2.5g each

Recipe #42 - Hot Chocolate

Ingredients:
2 tbsp. cocoa
2 tbsp. water
2 tsp. vanilla
5 pkgs. sugar substitute

Instructions:
Combine cocoa, sugar substitute, and water. Mix well, and cook over medium
heat stirring
constantly until it boils. Stir in vanilla. Store in refrigerator. Add 1
tbsp. of mixture to 5 oz. heavy
cream and 3 oz. water, heated.
1 glass with heavy cream mixture and 1 tbsp. chocolate mixture=7g

Recipe #43 - Fudge

Ingredients:
1 envelope unflavored gelatin
1/4 cup water
1 square unsweetened chocolate
1/4 tsp. cinnamon
2 tsp. Sugar Twin
1/4 cup water
1/2 cup evaporated milk
1 tsp. vanilla
1/4 cup chopped pecans

Instructions:
Soften gelatin in 1/4 cup water for 5 minutes. Melt chocolate with cinnamon
and sweetener; add
milk and water slowly. Add gelatin. Stir until dissolved. Remove from heat.
Add vanilla, cool.
When mixture begins to thicken, add nuts. Turn into cold pan. Refrigerate
and when firm, cut
into pieces.
Total carbohydrates = 26
8 pieces = 3grams each

Recipe #44 - Coconut Whipped Cream

Ingredients:
3/4 cup whipping cream
1/2 Tbs. Equal
1 tsp. vanilla
1/4 cup shredded coconut

Instructions:
Combine all ingredients in a chilled bowl. Whip cream until thick but still
glossy. (do not
overbeat) Serve on top of any flavor sugar free jello! Great dessert.
Total Carbohydrates: approx. 13
Divide into servings.

Recipe #45 - Vanilla Chiffon

Ingredients:
1 envelope Knox unflavored gelatin
1 & 1/2 tsp. Sugar Twin
3 pkgs. Equal
2 eggs, separated
1 & 1/4 cup heavy cream plus 1/2 cup water
1 tsp. vanilla extract

Instructions:
In medium saucepan, mix gelatin with 1 & 1/2 Tbsp. sugar substitute
(cookable type); blend in
egg yolks beaten with milk. Let stand one minute. Stir over low heat until
gelatin is completely
dissolved, about 5 minutes; add vanilla. Pour into large bowl and chill,
stirring occasionally, until
mixture mounds slightly when dropped from spoon. In medium bowl, beat egg
whites until soft
peaks form; gradually add remaining sugar substitute and beat until stiff.
Fold into gelatin
mixture. Turn into 4-cup bowl or dessert dishes and chill until set.
Total Carbohydrates: approx. 8 (1 cup=2g)
Variations:
Lemon chiffon: Omit vanilla. After gelatin is dissolved, cool mixture
completely. Add 2 tbsp.
lemon juice and 2 tsp. grated lemon peel.
Peppermint chiffon: Substitute 1/4 tsp. peppermint extract for vanilla; add
a few drops of red food
coloring.

Ingredients:
1 & 1/2 oz. unsweetened baker's chocolate
10 pkgs. sugar substitute
2 tbsp. butter
1 tbsp. heavy cream
1/2 tsp. vanilla
1/2 tsp. peppermint extract

Instructions:
Melt chocolate and butter in a double boiler system until chocolate is
almost completely melted.
Take off heat and stir until melted. Add in heavy cream, Equal, vanilla, and
peppermint, mix well
until smooth. Pour into a waxed paper lined shallow dish. Chill overnight,
cut into squares.
Total Carbohydrates: 22g
8 servings at 3g each

Recipe #47 - Coconut Macaroons

Ingredients:
1&1/3 cups shredded coconut
2 tablespoons sugar substitute
1 tbsp. soy flour
1/8 tsp. salt
2 egg whites
3/4 tsp. almond extract

Instructions:
Combine coconut, sugar substitute, flour and salt in mixing bowl. Stir in
egg whites and almond
extract; mix well. Drop by teaspoonfuls onto lightly greased baking sheets.
Bake at 325 degrees
for 20 to 25 minutes, until edges of cookies are golden brown. Remove from
cookie sheet
immediately.
Total Carbohydrates: 40 Makes 12 cookies at 3.5 g each

Recipe #48 - Fruit Delight
Ingredients:
2 3-ounce pkgs. cream cheese
5 tbsp. mayonnaise
pinch of salt
1/3 cup chopped toasted pecans
2 medium apples, cut up
1 cup fresh strawberries, quartered
1/2 cup whipping cream

Instructions:
Beat cream cheese until soft and smooth. Add mayonnaise and salt and beat
until well blended.
Add nuts and fruits and stir until evenly distributed. Beat cream until
stiff. Add to fruit and fold in
by cutting a spoon through cream and fruit mixture and turning fruit mixture
over cream.
Continue doing this until well blended but do not beat or stir. Cover and
chill for immediate use
or pack the salad in a square pan or ice tray, cover and freeze for future
use.
Total carbohydrates: 56 6 servings at 8g each

Recipe #49 - Strawberry Bavarian Cream

Ingredients:
2 tbsp. unflavored gelatin
1/4 cup cold water
1&1/2 cups fresh strawberries
5 tbsp. sugar substitute
1&1/2 cups whipping cream
1 tbsp. lemon juice

Instructions:
Sprinkle gelatin over cold water. Allow to stand until all gelatin is moist.
Wash, hull, and crush
strawberries. Add 5 tbsp. sugar substitute and 1 tbsp. lemon juice. Dissolve
moist gelatin in 1/2
cup hot water and add to strawberries. Stir and chill until mixture begins
to thicken. Beat cream
until stiff. Add cream to strawberry mixture and fold in by cutting a spoon
through cream and
strawberries and turning strawberries and turning strawberries over cream.
Continue doing this
until they are well blended and no lumps of cream are visible. Do not beat
or stir. Pour into a
1&1/2-quart mold which has been rinsed in cold water. Cover and chill in the
refrigerator until
firm. Unmold on serving plate and garnish with whole or crushed strawberries
or whipped cream.
Total Carbohydrates: 33g 6 servings at 5.5g each

Recipe #50 - Cream Cheese Balls
Ingredients:
8 oz. cream cheese
6 pkgs. sweetener
1/4 cup finely chopped pecans
1 oz unsweetened baker's chocolate
2 tbsp. butter
2 tbsp. heavy cream
1/2 tsp. vanilla
6 pkgs. sweetener

Instructions:
Cream the cream cheese and six packets of sweetener. Add pecans. Chill until
cheese will form
balls.
Melt the chocolate and butter together, slowly. Take off heat and add heavy
cream, vanilla and
sweetener. When you have rolled the cream cheese into balls, drizzle
chocolate mixture over
each. Chill until chocolate hardens enough to pick up (about 30 minutes).
Enjoy! ( I know I do!)
Total Carbohydrates: 35g 1 ball is less than 2 g
