I made this while my mother (a good baker and very weight conscious) was visiting. She found it so good and easy that she made it again a few days later when we had company.
LOW FAT BANANA CAKE
CAKE:
1/3 cup margarine or butter
3/4 cup white sugar
1/2 cup packed brown sugar
2 eggs
3/4 cup light sour cream
2 tsp. vanilla extract
1 medium ripe banana, mashed
1 1/2 cups all purpose flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
1 tsp baking soda
1/8 tsp ground allspice
1/8 tsp ground ginger
1/8 tsp ground nutmeg
FROSTING:
1/3 cup light cream cheese, softened
2/3 cup icing/confectioners sugar
1 tbsp. 2% milk
In food processor or bowl with an electric mixer, cream together butter, sugar and brown sugar. Add eggs one at a time, beating well after each. Beat in sour cream, vanilla and banana.
In separate bowl, stir together flour, baking powder, cinnamon, baking soda, allspice, ginger and nutmeg. Add liquid ingreds. to dry ingreds., blending just until mixed.
Pour into 12 cup (3 litre) Bundt pan sprayed with vegetable spray.
Bake at 350 F for 35 min. or until tester inserted in centre comes out clean. Cool in pan on wire rack.
Make frosting:
In bowl or food processor, beat together cream cheese, icing sugar and milk till smooth.
Invert cake and drizzle icing on top. BEWARE - cake can be crumbly and if you spread with a knife, be careful not to spread crumbs at the same time.
Makes 12 servings
