Recipe(tried): Macaroon Pie (2)
Misc. Good Morning Linda, I have 2 for you and they both are good!
MACAROON PIE: 3 egg whites, 1 cup sugar, 12 saltine crackers; crushed, 15 dates; chopped, 1 cup nuts; chopped, 1/2 tsp. soda, 1 tsp. almond extract, 1 tsp. vanilla and 1/2 tsp. butter flavoring, 1/2 pint fresh whipping cream, whipped--- Preheat oven to 350. Grease pie pan. Beat egg whites until stiff; gradually add 1 cup sugar. Fold in crackers, dates, nuts, soda and extacts. Pour into pie pan and bake for 20 min. Cool. Serve with whipping cream.
MACAROON PIE: 20 dates (1/3 lb.), 1/2 cup pecans, 12 soda crackers, 3 egg whites, 1 cup sugar, 1/4 tsp. baking powder, 1 tsp. almond extract, 1 tsp. vanilla and 1/2 tsp. butter flavoring, Pinch of salt.---- Chop dates and pecans. Crush crackers and mix with dates and nuts. Beat 3 egg whites very stiff. Mix sugar and baking powder, and add slowly to egg whites; add extracts and salt. Fold in date and nut mixture. Bake in well buttered pie tin at 300 for 25 min. May serve with whipped cream. Both of these are good and keep well. You'd never guess they had crackers in them! I hope this is what your looking for, although I'm pretty sure it's right on the money. Let me know how it turns out and if it's close.
I always add 1 tsp. vanilla and 1/2 tsp. butter flavoring to these
