SPICY FRIED CHICKEN

This recipe is out of Tabasco's Cookbooklet "Cookin' Up the Blues." It accompanies Carol Fran's and Clarence Hollimon's recipe for Fried Chicken Salad (which I have followed to try to duplicate TGIF's Cajun Chicken Salad, with pretty good results). Make it spicier by adding more Tabasco, extra fresh ground black pepper and/or some cayenne -- maybe even throw some finely minced fresh jalapeno into the flour mixture.
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 cup buttermilk
1 tablespoon Tabasco brand pepper sauce
1 pound boneless, skinless chicken, but into 1/2-inch strips
Vegetable oil for deep-frying
In a bowl, combine flour, salt, pepper and garlic powder; mix well and set aside. In another bowl, combine buttermilk and Tabasco sauce; mix well and set aside. Sprinkle chicken strips with additional salt and pepper (or other hot spices, like cayenne or Tony Cachere's Hot Cajun Seasoning).
Heat oil to 375 degrees. Dip chicken in buttermilk mixture, then dredge in flour mixture. Fry in hot oil about 2 minutes or until very crispy. Drain on paper towels.
