Here's another, hope one of these hits the spot, Jan
PECAN PIE
1 pie shell
1 cup firmly packed brown sugar
1/4 cup butter, softened
3 eggs
1/2 cup molasses
2 tsp vanilla
2 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp cloves, powdered
1/2 tsp salt
2 cups broken pecan pieces*
Prepare 1 pie shell and put it in the bottom of a pie tin. Prick the shell in several places with a fork.
Bake it at 450 degrees F for approximately 5 minutes. Allow it to cool while preparing the pie filling.
Reduce oven heat to 375 degrees F.
Cream the brown sugar and butter in a large bowl.
Add eggs one at a time, mixing thoroughly after each addition.
Mix in molasses and vanilla, then add all of the dry spices and salt; stir.
Finally, add pecan pieces. We like our pie to be very dense with nuts and often add as much as 3 cups. Adjust quantity according to taste. Pour filling into the shell.
Bake the pie for 35 minutes at 375 degrees F.
*The pie can also be made with walnuts.
