SPARKLING MANDARIN ORANGE CREAM PIE
3/4 cup boiling water
1 (3 oz) pkg JELL-O Sparkling Mandarin Orange (or Orange) Gelatin
1 cup cold club soda or seltzer
1/2 cup Cool Whip whipped topping, thawed
1 graham cracker crust (9 inch)
1 (8 oz) can mandarin orange segments, drained, divided use
fresh mint (optional, for garnish)
Stir 3/4 cup boiling water into (dry) gelatin in a large bowl at least 2 minutes until completely dissolved. Refrigerate 10 minutes.
Gently stir in club soda. Stir 1/2 cup of the gelatin mixture into whipped topping with wire whisk in small bowl. Pour into crust. Refrigerate crust about 15 minutes or until set but not firm (should stick to finger when touched).
Reserve remaining (clear) gelatin at room temperature 15 minutes.
Press 3/4 cup of the orange segments into creamy pie mixture. Gently stir clear gelatin mixture for 5 seconds; gently spoon over the top. Refrigerate 3 hours or until firm.
Garnish with remaining orange segments and fresh mint.
Makes 8 servings
