SWEET POTATO PIE
2 medium sweet potatoes, peeled and diced
1 stick (1/2 cup) unsalted butter
1 cup sugar
2 large eggs, beaten
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1 (9-inch) unbaked fluted pie shell
Preheat oven to 325 degrees F.
Place the potatoes in cold water, bring to a boil and cook until tender, 15 to 20 minutes. Drain, and mash the potatoes while hot with the butter and sugar. Let the potato mixture cool slightly.
Stir in the beaten eggs, buttermilk and vanilla. Place in the pie shell.
Bake 45 minutes to one hour, or until set.
Makes 1 (9-inch) pie
