I buy mahi whenever I can get it, which is rather difficult even in California! I cut it into individual serving-size pieces, dust them in flour and then egg that has been stirred with a little water. Sautee it lightly on both sides until it is golden brown. Depending on the thickness, it can take anywhere from two or three minutes a side to four or five. Test by trying to flake it with a fork. If it flakes easily and is no longer opaque, it is cooked. I serve it with either chopped macadamia nuts that have been sauteed in butter or sweet and sour sauce. I hope you enjoy this simple but delicious method!
