Recipe(tried): Yankee Omelet (using cream cheese and green onion)

Breakfast and Brunch
YANKEE OMELET
(Diabetic and Renal Diet Friendly)

4 large egg whites
4 large whole eggs
1/4 cup water
1/4 cup chopped scallions
1/2 tsp. ground black pepper
2 tsp. vegetable oil
2 ounces cream cheese, cold, cut into 1/2-inch pieces

Whisk together the egg whites and whole eggs, 1/4 cup water, scallion and black pepper in a medium bowl.

Preheat broiler.

Heat the vegetable oil in an 8- to 10-inch non-stick skillet (make sure the skillet has a metal handle) over medium heat until it is hot, but not smoking. Add eggs and mix well. Stir the egg for 2-3 minutes until egg starts to thicken. Quickly pull the egg that sets on the sides of the pan into the center, tipping pan to cook entire omelet.

Drop cream cheese pieces onto omelet, and broil in the oven until eggs are full cooked and golden.
