Recipe: Maple Glazed Carrots (3)

Hi Kim,

Maybe someone will have a recipe for you. In the meantime, here are three variations for you to experiment with. If you have time, let us know how they turn out!

Maple Glazed Carrots

3 lb. carrots, julienne
6 tbsp. melted butter
1/4 cup maple syrup
1 1/4 tsp. salt
1/2 tsp. cinnamon
1/8 tsp. pepper

Steam carrots for 10-15 minutes. Combine other ingredients toss carrots in and mix to coat. Serve immediately. Makes 10-14 servings. Equal parts carrots and rutabaga can be used if you wish. Carrots Delight

8 med. carrots
1/4 cup butter
1/2 cup real maple syrup
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. ginger
Few dashes cloves
Few dashes nutmeg

Quarter lengthwise peeled carrots, then cut into 2 inch strips. Melt butter in large casserole dish, then combine syrup with butter, adding spices. Stir carrots in glaze mixture, coating thoroughly. Microwave on high, stirring every few minutes, until desired doneness. About 10-15 minutes.Maple Glazed Carrots, Parsnips and Rutabaga

1 lb. carrots, peeled and cut into 3 x
1/4 inch strips
1 lb. parsnips
1 lb. rutabaga
6 tbsp. butter, room temperature
2 tbsp. lemon juice
2 tbsp. maple syrup
1 1/4 tsp. salt
1/4 tsp. cinnamon
Ground pepper to taste

Steam vegetables until crisp tender, about 8 minutes. Combine remaining ingredients in large bowl add vegetables and toss gently serve hot.

8 to 10 servings
