Recipe: Maple Nut Goodies with Chocolate Coating (using chocolate chips and butterscotch chips)

These have a chocolate shell.
1/2 cup butter, softened
1/4 cup milk
2 tbsp chocolate cook and serve pudding mix (not instant), dry
1 tsp maple flavoring
1/2 tsp vanilla
4 cups powdered sugar
1 cup salted peanuts
CHOCOLATE COATING:
2 cups milk chocolate chips
2 cups butterscotch chips
2 tbsp shortening
Melt butter, milk, pudding mix, maple flavoring, and vanilla in a saucepan over medium heat until well blended.
Measure powdered sugar into a mixing bowl. Pour maple mixture over powdered sugar and beat until well smooth and creamy.
Fold in peanuts. Cover and refrigerate until easy to handle (about 2 hours).
Roll mixture into 1 1/2 inch balls and press flat. Coat each patty with your favorite chocolate coating. Dry on wax paper overnight or until completely set.
CHOCOLATE COATING:
Melt in double boiler until smooth. Only melt about half at a time or chocolate will start to harden while you are working with it.
Store airtight in the refrigerator.
