2 c maple syrup
1 tbsp corn syrup
3/4 c cream or half and half
1 tsp vanilla
3/4 c chopped nuts
Place syrup and cream in saucepan. stir until mixture boils. continue cooking WITHOUT stirring until it reaches 234*
remove from heat. let stand without stirring until luke warm. add vanilla and nuts. then, beat until it thickens and starts to lose its gloss. pour at once into a buttered pan.
MAPLE DIVINITY CANDY
4 c maple syrup (or 2 c syrup and 2 c sugar)
4 egg whites
1 c chopped walnuts
heat the syrup to soft ball stage, 240*. beat the egg whites til they form stiff peaks. slowly pour hot syrup into the whites and continue to beat slowly until it forms soft peaks. add the nuts and mix thoroughly.
drop teaspoon of candy onto waxed paper. let harden til cool.
note: for best results, make this on a cool, dry day.
