CHERRY STREUSEL COFFEE CAKE
2 cups all-purpose flour
1 cup sugar
2 teaspoons Argo Baking Powder
1/2 teaspoon salt
1/2 cup butter OR margarine, softened
1/2 cup milk
2 eggs
1/2 teaspoon Spice Islands 100% Pure Bourbon Vanilla Extract
1/8 teaspoon almond extract
1 (21 ounce) can cherry pie filling
Combine flour, sugar, baking powder and salt in a large bowl. Cut in butter with a pastry blender or two forks until mixture is crumbly. Reserve 1/2 cup of mixture for topping. Set aside.
Beat milk, eggs, vanilla and almond extract until well mixed. Add to crumbly mixture and stir until blended. Pour into 13x9-inch greased pan. Spread with pie filling. Sprinkle with reserved crumbs.
Bake in a preheated 325 degree F oven for 40 to 45 minutes, until lightly browned and toothpick inserted in center comes out clean.
Serve warm or at room temperature.
Makes 1 (13x9-inch) cake, 12 servings
