Recipe(tried): Margarita Balls ......
Misc.Hi all ! Here is a recipe for people who like Bourbon Balls or Rum balls.
It comes from a magazine called Holiday Cakes and Cookies.
Margarita Balls
1-12 oz. pkg. vanilla wafers
1 1/2 cups pretzels
1-16 oz. box confectioner's sugar , sifted ( icing sugar )
3/4 cup frozen margarita or limeade concentrate , thawed ( I used Bacardi's)
2-3 oz. pkg. cream cheese ( 6 oz. total ) softened
1 tsp. tequila, or to taste ( optional )
1 tsp. orang-flavored liqueur , or to taste ( optional )
finely grated rind of 1 lime
1- 2.25 oz. shaker of green colored sugar
1/2 cup granulated sugar
1.) Using a food processor with metal blade , process the vanilla wafers to
fine crumbs. You might have to do this in steps.
2.) Process prtezels to fine crumbs, measure to make 3/4 cup crumbs.
Add to wafer crumbs.
3.) Combine wafer crumbs, pretzel crumbs , confectioner's sugar, margarita
concentrate and cream cheese in a large bowl. Add tequila and liqueur,
if using , and blend or stir well.Divide mixture in half. Wrap each
half in plastic wrap and chill for at least 2 hours. Mixture should be
firm enough to roll into balls.
4.) Combine half the lime rind with the green colored sugar in a small bowl.
Combine the remaining lime rind with the granulated sugar in another
small bowl.
5.) Tear off pieces of dough and shape into 1" balls.Roll balls in either
green or white sugar.Work fairly quickly, as dough dries rapidly.
Repeat until all dough is used. Store in an airtight container in
refrigerator up to 1 week.
