Recipe(tried): Mashed Potatoes - Yield chart and Washington Mashed Potatoes (serves 24)
Side Dishes - Potatoes Help! I am doing dinners at church and I need to know how many pounds of potatoes for mashed potatoes do I need to feed a crowd of 70 to 80 people. I am sure there is a book out there somewhere that would give specifics on quantity cooking. If anyone knows of one, please let me know. THANKS. - Pam, Ohio

Here is a chart for you from the Ohio State University Extension:
Potatoes - Yield
Due to the many variables, such as moisture content, size and variety, it is impossible to give specific recommendations as to quantity to buy. The recommendations below are approximations only.
* 1 pound fresh potatoes equals:
- about 3 medium potatoes
- 3 cups peeled and sliced
- 2 1/2 cups peeled and diced
- 2 cups mashed
- 2 cups french fries
* 1 bushel equals 60 pounds and fills 18-22 quarts
* 2 pounds medium potatoes equals about 6 servings potato salad (1 potato per serving)
and here is a recipe for 24 (5 oz) servings:
