Recipe: Nalystniki (Potatoe Pancakes) - Ukranian

Side Dishes - Potatoes
NALYSTNIKI (POTATOE PANCAKES)

4 large raw potatoes, grated
2 eggs, beaten
4 tbsp flour
1/2 tsp baking powder
1/2 tsp salt
oil
sour cream

Grate potatoes, drain off surplus liquid. Add eggs, flour, baking powder, and salt. Mix well until all is combined.

Cook by heaping tablespoonfuls (spread out a little bit with back of spoon) in hot oil in heavy 10-inch skillet. Fry until golden brown on both sides.

Remove from skillet, drain on paper towels and keep warm in covered container.

Serve with whipped sour cream.
